Our 60 lb Bread Flour is stone-milled from Linkert hard red spring wheat grown on our family farm in rural Minnesota. Milled to a 70% extraction, this flour strikes a balance between the strength and performance of a traditional bread flour while retaining more flavor, nutrition, and character from the whole grain.
Naturally high in protein with excellent fermentation properties, this flour was developed for artisan bakers, sourdough enthusiasts, pizzerias, and wholesale kitchens seeking exceptional performance with the depth and vitality of fresh-milled flour. Expect strong dough development, beautiful oven spring, and a rich wheat flavor that reflects the soil it was grown in. We’re currently transitioning to organic and have not sprayed our fields since starting our farming career in 2023.
